Hi,
how to store galangal for long long time?
coz i have a whole bed of them (> 10 yrs) to dig up.
someone (on the net) says he keeps them moist n in fridge. lasts 1 yr.
mine mouldy after 1 mth.

After digging them up, clean them up with water and then sun them dry as much as possible. Then wrap them up in newspaper and seal in plastic bag and store in freezer. hth
Actually if you can clean them up without using water, it would be better. Then it's like right after the harvest, you clean and dry them up and then store in freezer right away. No water ... will minimise chances of mould growing.
